Our refreshing Raspberry Granita is perfect for a warm Summer day, it’s a great healthy treat for the whole family including the kids. Follow this simple recipe to make yours. Ingredients can be easily substituted to create any fruit based, sugar free granita.
Ingredients
Good quality organic fruit of your choice choice
Use a 2:1 ratio of fruit to water/liquid.
Lemon Juice
500g raspberries and 250g water
Sweetener of your choice, like stevia or good quality honey
What to do
Bring the water to a simmer, chuck in the washed raspberries and let this infuse whilst cooling down. Could add some mint or any other flavouring of your choice, vanilla or anything tasty that is growing in your garden or in your fridge:)
Then a squeeze of lemon juice. Strain the mixture through a sieve, pushing down on the pulp to really get all the good stuff through the gaps, or blitz quickly in a blender. Some fruits with seeds, you would want to strain them through a sieve.
Pour this mix into a shallow tray/container, but with sides high enough to avoid any spillages. and freeze. Now the only important part is to scrape/disturb the mixture about every hour, for around 6 hours until it is like a slush consistency.
If you end up with big clumps of ice, just break them down in a blender and drink it like a slush puppy. Alternatively, return to the freezer and scrape with a fork after 60 minutes to make the granita texture.
